I've never grounded myself when building a PC. It takes a lot of static electricity to kill PC components, just don't go rubbing balloons before you do it.
What's most important is not to ground yourself, but to "ground" yourself to the case, to get equal potential as the case. This is to prevent static build-up which can discharge and kill the electronics. If both you and the case are grounded that's even better, but not necessary during the build process
Static electricity can kill PC components. Ever rubbed over a carpet in socks and then touched a person and got a shock? Static.
Same reason for electronics being shipped in ESD bags.

I usually touch the inside of the case (bare metal) to ground myself.

It depends on your environment. At my place, humidity is damn high and static electricity just don’t build up
